Buffalo Chicken Sliders

Buffalo Chicken Sliders are mini sandwiches made with shredded chicken coated in a buttery hot sauce mixture, layered on sweet Hawaiian rolls with cheddar cheese, and baked until the tops are golden and flavorful. The sliders combine spicy, tangy chicken with soft bread and melted cheese, served alongside ranch or blue cheese dressing for dipping. They offer a convenient finger food option with a balance of sweet, spicy, and creamy elements.

Description

This recipe uses cooked, shredded chicken stirred into a sauce made from melted butter mixed with Frank's Red Hot sauce and ranch seasoning to create a classic buffalo flavor. The mixture is spread on the bottom halves of split Hawaiian rolls, topped with cheddar cheese, then covered with the roll tops. A seasoned butter-ranch mixture is brushed on the top before baking at 350 degrees, resulting in warmed sliders with a golden crust on the rolls.

The sliders combine the sweetness of the Hawaiian rolls with the tangy, spicy heat of buffalo sauce softened by butter and ranch seasoning. The melted cheddar adds a creamy, savory layer. This results in a contrast of textures: soft rolls, tender spicy chicken, and melted cheese.

They are suitable for serving as appetizers, game-day snacks, or casual meals. Ranch or blue cheese dressing served alongside provides a cooling dip that balances the spice.

Variations are possible with different cheeses like shredded cheddar, mozzarella, or blue cheese crumbles. Adjusting the amount of hot sauce allows control over the spice level, and pre-made buffalo sauce can substitute the butter-sauce mixture for convenience.

Ingredients

Servings
  • 1/2 cup butter divided
  • 1/2 cup hot sauce more to taste, Frank's Red Hot
  • 2 cups chicken cooked, shredded or chopped
  • 3 tablespoons ranch seasoning divided, dry
  • 6 lices cheddar cheese
  • 12 King's Hawaiian Rolls
  • ranch dressing for serving, or blue cheese (dressing

Instructions

  1. Preheat oven to 350 degrees.
  2.  Add 1/4 cup of butter to a small sauce pan over medium heat and melt.
  3. Stir in the Frank's Red Hot to combine. Remove from the heat.
  4. Add the chicken to the pan along with 2 tablespoons of ranch seasoning. Stir to coat chicken.
  5. Use a bread knife to slice the rolls in half to form sandwich buns. Place the bottom half of the rolls in a 9x13 baking dish.
  6. Top each roll with the chicken mixture and a half of a slice of the cheddar cheese.
  7. Place the top halves of the rolls over the chicken.
  8. Melt the remaining 1/4 cup of butter over low heat. Stir in the remaining tablespoon of ranch seasoning until well combined. Spoon the mixture evenly over the tops of each roll.
  9. Bake uncovered for 15 minutes or until heated through and rolls are golden brown.
  10. Serve with prepared ranch dressing or blue cheese dressing for dipping.

Notes

  • Sliced cheddar cheese is used here, but shredded cheddar, mozzarella, or blue cheese crumbles also work well.
  • The buffalo sauce is made with butter and Frank's Red Hot; premade buffalo sauce can be substituted if preferred.
  • Adjust the amount of hot sauce to tailor the spice level to your taste.
  • Sweet Hawaiian rolls complement the spicy chicken, but any roll or bun can be used.
