Description

The soup starts by sautéing carrots, onions, and celery in butter until softened. Chicken broth, diced tomatoes with green chiles, buffalo wing sauce, and seasoning powders are added to build a savory, spicy base. Cream cheese is whisked in to create a smooth, creamy broth.

Shredded chicken and shredded cheddar cheese are folded in and heated until cheese melts, giving the soup body and richness. Optional toppings like blue cheese crumbles and diced bacon add stronger flavors and texture contrast.

This soup can be served on its own or with bread. It features the characteristic tangy heat of buffalo sauce balanced by creamy cheese and vegetables, making it comforting yet flavorful for cooler days.

  • 2 tablespoons butter
  • 1/4 /4 cup carrot finely diced
  • 1/4 /4 cup onion finely diced
  • 1/4 /4 cup celery finely diced
  • 2 cups chicken broth (I like to use Better than Boullion Base)
  • 1 (10 ounce) diced tomatoes with green chiles can, Rotel brand, undrained
  • 1/4 /4 cup buffalo wing sauce (like Franks - add more to taste)
  • 1/2 /2 teaspoon garlic powder
  • 1/2 /2 teaspoon onion powder
  • 8 ounces cream cheese softened
  • 2 cups chicken breast rotisserie chicken is good here too, cooked and shredded, or thighs
  • 1 1/2 /2 cups cheddar cheese shredded

Instructions

  1. In a large pot, melt the butter. Add the celery, onion, and carrots and sautee until soft. The carrots take the longest to get soft.
  2. Add the chicken broth, diced tomatoes, Buffalo wing sauce, garlic powder, and onion powder. Stir until combined. Add the cream cheese and cook over medium low heat, whisking until incorporated and smooth.
  3. Reduce heat to low. Stir in the cheese and chicken and simmer until cheese is melted. Add salt and pepper to taste. Top with blue cheese crumbles or bacon if desired to serve.
