Buffalo Chicken Thighs
Description
This recipe uses boneless, skinless chicken thighs marinated in cayenne hot sauce, then baked until golden brown. Baking develops a slightly crisp exterior while maintaining moistness inside the chicken pieces. The chicken is finished by dipping in a buffalo sauce made from heated hot sauce and melted butter, which coats the thighs in a glossy, spicy glaze before a short final bake sets the sauce.
The resulting dish delivers tender, juicy chicken with a pronounced spicy buffalo flavor complemented by butter's richness. Baking rather than frying makes the cooking process straightforward and less oily.
Serve these buffalo thighs alone, with celery sticks, or alongside blue cheese dressing for a classic buffalo-style presentation. They can also be shredded for sandwiches or salads.
Practical tips include trimming excess fat from the thighs before cooking, heating the hot sauce before combining with butter to avoid re-solidification, verifying doneness with an internal temperature of 165°, and safe storage instructions for leftovers. Reheating is recommended in an oven or air fryer to maintain texture.
Ingredients
- 2 pounds chicken thighs boneless, skinless
- 1 cup cayenne hot sauce such as Frank's Red Hot
- ¼ cup butter melted
Instructions
- Pat the chicken thighs dry with paper towels.
- Trim any visible fat from the chicken and season with black pepper.
- In a large bowl, combine the chicken with ½ cup of the hot sauce, tossing or stirring to coat. Cover and marinate, in the fridge, for at least one hour.
- Preheat oven to 400° Arrange chicken on a baking tray lined with parchment paper.
- Bake 20 minutes, flipping halfway through. The chicken will be golden brown.
- While the chicken cooks make the spicy buffalo sauce. In a microwave safe small bowl, heat the remainder of the hot sauce for 1-2 minutes. Or use a small saucepan over medium-high heat. Add the butter, stirring until combined.
- Using tongs, submerge each piece of chicken in the buffalo sauce until coated. Return the chicken to the baking sheet.
- Bake for 5 more minutes.
Notes
- Trim excess fat from chicken thighs using kitchen scissors before cooking.
- Heat the hot sauce before adding butter to keep the sauce smooth and prevent the butter from solidifying.
- Cook chicken to an internal temperature of 165°F, checking with a meat thermometer.
- Store leftovers in an airtight container in the fridge for up to 3 days.
- Reheat leftovers in an oven at 400°F for 10 minutes or an air fryer for 5 minutes to maintain texture.
- For less spice, opt for a mild buffalo sauce instead of medium hot sauce.
