Buffalo Chicken Zucchini Boats Recipe

Buffalo Chicken Zucchini Boats fill hollowed zucchini halves with spicy buffalo wing sauce-coated ground chicken, topped with melted mozzarella cheese and baked until tender. The combination balances the mild freshness of zucchini with the bold, tangy flavor of buffalo sauce, making an appealing low-carb main dish baked in the oven.

Description

The Buffalo Chicken Zucchini Boats Recipe features small to medium zucchinis sliced lengthwise and scooped to create hollow boats. Ground chicken is cooked thoroughly on the stove, then mixed with buffalo wing sauce to infuse it with tangy heat. The chicken mixture is spooned into each zucchini boat, which is then topped with shredded mozzarella cheese.

The assembled boats are covered with foil and baked at 400 degrees Fahrenheit for 35 minutes. This baking softens the zucchini to a tender texture while melting the cheese into the spicy chicken filling. The interplay of juicy zucchini, mildly spicy chicken, and creamy cheese creates a balanced flavor profile.

These boats can work as a gluten-free, vegetable-packed entrée option and are suitable for those looking for a flavorful protein-rich meal that incorporates vegetables. Their presentation also makes them a straightforward baked dish.

Ingredients

Servings
  • 4 zucchini about 1¾ pounds, small-medium
  • 1 lb. ground chicken
  • 1/2 cup buffalo wing sauce not regular hot sauce
  • 1 cup mozzarella cheese shredded

Instructions

  1. Preheat oven to 400 degrees F. Spray a 9x13 inch baking dish with cooking spray.
  2. Place a large non-stick skillet over medium-high heat. Add the chicken and break it apart with a wooden spoon. Cook for 7-9 minutes, until the chicken is cooked through, stirring occasionally.
  3. Remove the skillet from the heat. Stir in the buffalo wing sauce.
  4. As the chicken cooks, cut the zucchini in half, lengthwise. Use a spoon to scoop the seeds and center out of each zucchini half, leaving a ¼ inch thick zucchini boat. Place the zucchini in the baking dish cut-side up.
  5. Spoon the chicken mixture into the zucchini boats. Sprinkle the zucchini evenly with the cheese.
  6. Cover the baking dish with foil. Bake for 35 minutes.
