Buffalo Grilled Chicken Wrap

Perfectly grilled chicken breasts chopped and tossed with buffalo sauce and blue cheese. Then wrapped in whole wheat tortillas and topped with shredded carrots and celery sticks.

  • 2 large chicken breast
  • 1 tablespoon olive oil
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • salt to taste, Kosher
  • black pepper to taste, Kosher
  • 1 cup buffalo sauce low sugar
  • 1 cup blue cheese crumbled
  • 4 large whole wheat tortillas
  • romaine lettuce as needed, leaves
  • 2 large carrot shredded
  • 2 celery thinly sliced, sticks

Instructions

  1. Rub the chicken with oil and seasonings. Preheat a grill pan or an outdoor grill over medium-high heat. Grill the chicken for 7-9 minutes per side, or until the internal temperature reaches 165F.
  2. Allow the grilled chicken to cool, then chop it. In a mixing bowl, combine the grilled chopped chicken with buffalo sauce and crumbled blue cheese.
  3. Lay one tortilla on a clean chopping board and layer 2 lettuce leaves on top.
  4. Add a few spoonfuls of buffalo-chicken mixture.
  5. Top with carrots and celery. Roll tightly and cut in half to serve. Repeat with the remaining tortillas and filling ingredients.

Notes

  • serving size is one whole tortilla wrap or two halves.
  • use any tortilla wrap of your choice. So many great and healthy options to choose from.
  • find some healthier buffalo sauces that are low in sugar. Or make your own at home and it's easy too. To learn how to make some at home, check out my How to make homemade buffalo sauce.
  • instead of romaine lettuce, you can use shredded cabbage or some other greens like spinach.
  • If you do not like blue cheese use crumbled feta cheese or even crumbled goat cheese
