Description
These wings start by cutting whole chicken wings at the joints into drumettes and flats. They are then deep-fried in vegetable oil at 350°F until cooked through and crisp, ensuring a juicy inside with a crunchy skin. The wings are drained and then tossed immediately in a freshly made Buffalo sauce.
The sauce is made by melting salted butter and combining it with a generous amount of hot sauce, garlic puree, sugar, cayenne, black pepper, and Worcestershire sauce. It is cooked briefly until bubbling to meld flavors before being quickly whisked with an egg yolk to enrich and slightly thicken the sauce without curdling.
Once coated in the sauce, the wings take on a glossy, spicy coating with layers of tangy heat and savory notes. They are served hot alongside creamy ranch or blue cheese dressing, which adds cooling contrast and complements the vibrant sauce.
Ingredients
- 2 pounds chicken wings
- vegetable oil for frying
- 4 tablespoons butter salted
- 1 1/2 cups hot sauce Frank’s Red Hot Sauce brand
- 1 1/2 teaspoons Garlic puree
- 1 teaspoon granulated sugar
- 3/4 teaspoon cayenne pepper
- 1/2 teaspoon black pepper freshly ground
- 1 tablespoon Worcestershire sauce
- 1 egg yolk
- 1 cup ranch dressing for serving, or blue cheese dressing
Instructions
- If the wings have not been pre-cut, straighten the wings and cut at each joint. You can save the wing tips for chicken stock.
- Heat the vegetable oil to 350°F in a large heavy-duty pot or deep fryer and fry the wings for 8 to 10 minutes. The chicken will be done when the internal temperature reaches 165°F and the juices from the chicken run clear. Remove the wings from the oil and let them drain on a wire rack over a baking sheet.
- To make the Buffalo sauce, melt the butter in a saucepan over medium heat. When the butter has melted, add the hot sauce. Cook until the mixture starts to bubble, whisking constantly. Remove the sauce from the heat and add the remaining ingredients (except for the ranch or blue cheese dressing), whisking constantly for 2 minutes to prevent the egg yolk from scrambling.
- Place the fried wings into a large bowl. Pour the sauce over the wings and toss until all the wings are coated. Serve with ranch or blue cheese dressing.
