Buffalo Wings Recipe (How to Make Buffalo Wings)

Buffalo Wings are prepared by seasoning chicken wings with baking powder, salt, pepper, and optional spices, then cooked either by baking in two stages or deep frying until crispy. A buttery, tangy hot sauce made from butter, hot sauce, vinegar, and Worcestershire sauce coats the wings, providing a classic Buffalo flavor that is spicy and rich. The wings have a crispy exterior with juicy meat inside.

Description

This Buffalo Wings recipe involves drying wings thoroughly for crispiness and coating them with baking powder and spices. Baking is done initially at a low temperature to render fat, then at a higher temperature to crisp the skin, or alternatively, wings are deep-fried to golden brown. The internal temperature should reach 165°F to ensure doneness.

The Buffalo sauce combines melted butter, hot sauce (such as Franks or Valentina), vinegar, and Worcestershire sauce. This sauce is typically tossed with the cooked wings to coat them evenly, creating a balance of spicy, buttery, and slightly tangy flavors.

These wings can be served as an appetizer or main dish, often paired with celery sticks and blue cheese or ranch dressing. The seasoning mix on the wings before cooking helps achieve a crispy texture and enhanced flavor within the meat.

Nutritional information provided focuses on baked wings, reflecting a potentially lower fat content than fried versions.

Ingredients

Servings

FOR THE BUFFALO WINGS

  • 2 pounds chicken wings separated and wing tips removed
  • 1 tablespoon baking powder
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • Extra seasonings as desired - I vary this up but love granulated garlic and other spicy chili powders

FOR THE BUFFALO SAUCE

  • 1 butter 1/2 cup or 8 tablespoons, stick
  • ½ cup hot sauce Franks is very popular though I use Valentina HOT, louisiana style
  • 2 tablespoons apple cider vinegar or white vinegar
  • 1 teaspoon Worcestershire sauce

Instructions

PREP THE CHICKEN WINGS

  1. Pat the wings as dry as you can get them. This will help with the crispiness.
  2. Set the wings into a large bowl and season with baking powder, garlic powder, chili powder, salt and pepper. Toss to get them nice and coated. The baking powder helps with the crispiness.

FOR BAKED BUFFALO WINGS

  1. Heat oven to 250 degrees F. Set the wings onto a lightly oiled baking sheet and bake for 30 minutes.
  2. Increase oven heat to 425 degrees F. Flip the chicken wings and bake another 30 minutes, or until the wings are cooked through and the skins are nice and crispy.

FOR FRIED BUFFALO WINGS

  1. Heat several inches of frying oil heated to 350 degrees F in a large pot. Do not boil.
  2. Fry the wings for 8-10 minutes, or until golden brown and cooked through. They should register 165 degrees F internally when measured with a meat thermometer.
  3. Remove and set onto a paper towel lined plate to drain.

FOR THE BUFFALO SAUCE

  1. Heat the butter, hot sauce, vinegar and Worcestershire sauce in a sauce pan until the butter melts. Whisk vigorously until the sauce thickens up.

TO SERVE

  1. Toss the finished buffalo wings in the buffalo sauce. Serve with ranch dressing or blue cheese dressing and celery sticks.

Notes

  • Ensure wings are fully dried before seasoning to improve crispiness during cooking.
  • When baking, start at a low temperature to render fat, then increase heat to crisp skin thoroughly.
  • Use a meat thermometer to confirm wings reach an internal temperature of 165°F for safe consumption.
  • The sauce can be adjusted in spiciness by varying the hot sauce or vinegar amount.
