Description

Burger Steak starts with ground beef combined gently with bread soaked in beef broth, small grated onions, egg, salt, and pepper, then formed into patties with a slight indentation to prevent bulging when cooked. The patties are browned in canola oil but not fully cooked through initially. Mushrooms are briefly sautéed and set aside.

A classic brown gravy is made by creating a roux with butter and flour, cooked until lightly golden, then gradually whisking in beef broth to a smooth consistency, seasoned with salt and black pepper. The partially cooked patties are typically finished cooking in the gravy, absorbing its flavor.

The finished dish features tender beef patties with a moist crumb and a lightly crisp exterior, paired with a silky mushroom-laden brown gravy. It is commonly served with rice, making it a hearty comfort meal.

Care is taken to avoid overmixing the meat mixture which can toughen the patties, and the gravy is cooked to a gentle golden color to develop flavor without burning. Pressing the center of patties prevents distortion during frying.

Ingredients

  • 2 lices white bread torn into small pieces
  • ¼ cup beef broth or water
  • 1 pound ground beef 80/20 ground chuck
  • 1 onion small, peeled and grated
  • 1 egg well beaten
  • 1 teaspoon salt
  • ¼ teaspoon black pepper
  • 2 tablespoons canola oil
  • 1 can button mushrooms 14 ounces, drained and sliced

For the Gravy

  • ¼ cup butter
  • ¼ cup flour
  • 2 cups beef broth
  • ¼ teaspoon salt
  • ¼ teaspoon black pepper

Instructions

  1. In a small bowl, soak bread in broth. Tear with your hands until it resembles a soft paste.
  2. In a large bowl, combine ground beef, soaked bread, onions, egg, salt, and pepper. Gently mix until combined. 
  3. Divide meat into portions and shape into patties. With your thumb, gently press in the center of each patty to make a slight indentation.
  4. In a skillet over medium heat, heat oil. Add mushrooms and cook, stirring regularly, for about 1 to 2 minutes. With a slotted spoon, remove from pan and keep warm. 
  5. Add beef patties in a single layer and cook for about 1 to 2 minutes on each side or until lightly browned but not cooked through. Remove burgers from pan and drain on paper towels. Keep warm.
  6. In a saucepan over medium heat, heat the butter until melted. Sprinkle in the flour and whisk until smooth and blended. Continue to cook, stirring regularly, for about 2 to 3 minutes or until roux turns lightly golden.
  7. Slowly add beef stock, whisk until smooth, and continue to cook until sauce begins to thicken. Add salt and pepper for the gravy.
  8. Add meat patties in a single layer in the pan. Lower heat, cover, and continue to cook for about 10 to 15 minutes or until meat is fully cooked. 
  9. Add mushrooms during the last 5 minutes and cook until heated through. Serve hot.

Notes

  • Combine ingredients lightly to avoid toughening the patties.
  • Shape patties slightly larger than desired to account for shrinkage during cooking.
  • Make a slight indentation in the center of each patty to prevent bulging as they cook.
  • Avoid pressing down patties while frying to retain juices and tenderness.
