Ingredients
- 6 medium Campari tomatoes , quartered
- ½ avocado , pitted and sliced
- ¼ cup slivered red onion
- 2 balls burrata , drained
- torn fresh basil leaves
- 2 tablespoons fruity extra virgin olive oil , the best you can afford
- 1 tablespoon champagne vinegar , or rice vinegar
- Kosher salt and freshly ground black pepper
Instructions
- Place sliced tomatoes, avocado, and slivered onion on a plate or divide between two bowls. Drain the water from the burrata balls and gently break them in half before plating them with the veggies. Sprinkle it all with torn basil leaves and drizzle with olive oil and vinegar. Add kosher and freshly cracked black pepper to taste. The olive oil is really the key and main flavor so add more to taste and make sure its good and fruity to complement the freshness of the other ingredients.
