Burrata Bruschetta

Burrata Bruschetta features toasted or grilled thick slices of ciabatta bread topped with creamy burrata cheese and roasted grape tomatoes seasoned with olive oil, balsamic vinegar, salt, and pepper. A fresh basil and garlic sauce is drizzled over the top, adding herbal brightness. The combination yields a contrast of crunchy bread, rich cheese, and flavorful roasted vegetables, suitable as an elegant appetizer or light meal.

Description

This recipe starts by roasting halved grape tomatoes with olive oil, balsamic vinegar, and seasoning in a 350°F oven until the tomatoes soften and intensify in flavor. Meanwhile, a basil, garlic, and olive oil sauce is pureed until smooth to provide a fresh, aromatic drizzle. The ciabatta bread is toasted or grilled with olive oil for a crusty base that holds the toppings well.

Once assembled, slices of creamy burrata cheese are placed on the toasted bread, topped with the roasted tomatoes and finished with the basil sauce. Optional balsamic reduction can be drizzled over for added sweetness and acidity. The result is a balance of textures and flavors: crunchy bread, soft cheese, tangy and sweet tomatoes, and fragrant herb sauce–a casual yet refined dish.

This bruschetta can be served as a starter or light lunch and pairs well with salads or light wines. Preparing the tomato roasting and sauce ahead can save time. Careful toasting prevents burning and maintains crispness to complement the creamy toppings.
