Burst Tomato Burrata Pasta
Description
This pasta dish begins by gently warming olive oil with minced garlic, dried basil, and crushed red pepper flakes to infuse the oil with aromatic and mildly spicy notes. Cherry or grape tomatoes are added with seasoning and cooked slowly for 20 to 25 minutes, allowing the tomatoes to soften and burst, creating a luscious tomato sauce.
Meanwhile, pasta such as spaghetti or bucatini is cooked in salted water until tender. The drained pasta is added directly to the skillet with the bursting tomatoes, allowing the noodles to absorb the flavorful oil and tomato juices. Fresh chopped basil is folded in off heat, and soft burrata cheese is added in pieces or as a whole, melting slightly from the residual warmth to add creamy richness.
The final dish balances the sweetness and slight acidity of the cooked tomatoes with the creamy softness of burrata and the subtle heat of chili flakes. It is commonly finished with grated Parmesan cheese and additional fresh basil and pepper flakes for garnish, served immediately to preserve the textures.
Ingredients
- ¼ cup olive oil
- 6 garlic minced, cloves
- 1/2 teaspoon basil dried
- ¼ teaspoon crushed red pepper flakes plus more for sprinkling
- 3 cups tomatoes cherry or grape
- salt kosher salt
- black pepper kosher salt
- ½ pound pasta like spaghetti or bucatini
- ¼ cup basil plus more for sprinkling, chopped, fresh
- 8 ounces burrata cheese
- Parmesan Cheese for topping
Instructions
- Heat the olive oil in a large skillet over medium-low heat. Add in the garlic, dried basil and red pepper flakes, cooking for 1 to 2 minutes. Add in the tomatoes with a big pinch of salt and pepper and toss them in the oil. Let the tomatoes cook for 20 to 25 minutes, until they begin to burst. Keep an eye on the skillet and low the heat if needed - if the tomatoes aren’t bursting, you can increase the heat just a bit too.
- While the tomatoes burst, bring a pot of salted water to a boil and cook the pasta.
- Once the pasta is done, drain it and add it directly to the skillet. Toss the mixture a few times so all the noodles are coated. Turn off the heat and toss in the fresh basil. Add in the burrata cheese, either in pieces or one large ball, and mix it in as much as you’d like (or as little!). Taste the pasta and add in more salt and pepper if needed.
- Serve immediately, top with parmesan cheese, more fresh basil and red pepper flakes.
