Buta Don is a Japanese pork rice bowl featuring tender pork fillets seasoned and quickly pan-fried, served over steamed rice with crisp lettuce. A miso and soy sauce mixture, enriched with garlic and butter cooked in the pan, is drizzled on top for a savory finish.

Description

This Buta Don recipe starts with thinly sliced pork fillet seasoned simply with salt and black pepper. The pork is seared on both sides until cooked through and then rested covered to keep warm. In the same pan, thinly sliced garlic is cooked until golden and crunchy, then butter is added along with a combined sauce of miso paste and soy sauce brought to a bubble. This garlic soy butter mixture is poured over rice bowls topped with fresh torn lettuce and the cooked pork slices.

The dish combines tender pork with the umami of miso and soy, brightened with aromatic garlic and mellow butter. Lettuce adds a fresh, crisp component contrasting with the savory sauce and warm rice. This donburi offers a balanced and approachable meal centered on quality ingredients and simple preparation.

Any cut of pork can be substituted, and any type of miso paste—red, white, or mixed—can be used based on preference. Cooking steamed rice is not included in preparation time, and it is recommended to use a donburi bowl for serving.

  • 1 clove garlic
  • 1 cup lettuce leaves
  • 1 tsp soy sauce
  • tsp miso paste *1
  • 300 g pork fillet
  • a pinch salt
  • a pinch black pepper
  • 2 tsp olive oil
  • 20 g butter
  • 3 cups rice plain steamed

Instructions

  1. Peel the garlic and slice very thinly. Set aside.
  2. Wash the lettuce thoroughly and tear into small pieces. Set aside.
  3. Combine soy sauce and miso paste and set aside.
  4. Slice the pork fillet into about 1cm thick slices, making sure to season with salt and pepper.
  5. Heat 2 tsp olive oil in a frying pan over med-high heat.
  6. Place the pork fillet in the heated frying pan. Cook about and half minutes one side then flip over the pork fillets and cook further one and half minutes.
  7. Turn the heat off, and transfer the pork fillet from the frying pan to a plate.
  8. Cover the plate with aluminium foil to rest.
  9. Put the frying pan back on medium heat. Add the sliced garlic and cook for 1- 2 minutes until the garlic become golden brown and crunchy.
  10. Add 20 g butter and the combined soy sauce and miso to the pan bring to bubble.
  11. Serve rice in a donburi bowl, scattering the lettuce, and placing the cooked pork fillets on top.
  12. Drizzle the garlic soy sauce butter over the pork and rice.
  13. Garnish with chopped green shallots or chives.

Notes

  • Cooking steamed rice is not included in the prep time; prepare rice separately before assembling.
  • Any pork cut can be used, adjust cooking time accordingly for thickness.
  • Use any type of miso paste—red, white, or mixed—to vary flavor profile.
