Butter Lettuce Salad with Apple & Cheddar

This Butter Lettuce Salad is super easy to put together and these Cosmic Crisp apples pair so well with the cheddar cheese. Your whole family will love this!

Ingredients

Servings
  • 1 Cosmic Crisp apple about a heaping cup, large or 2 small, cut into matchsticks
  • 1 cup White Cheddar Cheese coarsely grated, old
  • 1/2 cup almonds chopped, toasted
  • 1 radicchio lettuce small, chopped thinly
  • 1 head butter lettuce torn into pieces
  • 1/2 cup red onion thinly sliced

Lemon Dressing

  • 1/2 cup olive oil
  • 1 tsp salt
  • 1/2 tsp black pepper
  • juice lemon large
  • 1/2 tbsp red wine vinegar
  • 2 garlic cloves, pressed
  • 1 tsp Dijon mustard

Instructions

  1. Toast the almonds over medium heat in a small frying pan until fragrant and starting to turn golden brown.
  2. Add all ingredients to a large platter or bowl. Drizzle with dressing, toss and serve.

Notes

  • Serve this as a side salad with your favourite dinner anytime of year!
  • Make 2 large salads and top with your favourite protein.
