Butter Lettuce Salad with Apple & Cheddar

This Butter Lettuce Salad is super easy to put together and these Cosmic Crisp apples pair so well with the cheddar cheese. Your whole family will love this!

Ingredients
- 1 Cosmic Crisp apple about a heaping cup, large or 2 small, cut into matchsticks
- 1 cup White Cheddar Cheese coarsely grated, old
- 1/2 cup almonds chopped, toasted
- 1 radicchio lettuce small, chopped thinly
- 1 head butter lettuce torn into pieces
- 1/2 cup red onion thinly sliced
Lemon Dressing
- 1/2 cup olive oil
- 1 tsp salt
- 1/2 tsp black pepper
- juice lemon large
- 1/2 tbsp red wine vinegar
- 2 garlic cloves, pressed
- 1 tsp Dijon mustard
Instructions
- Toast the almonds over medium heat in a small frying pan until fragrant and starting to turn golden brown.
- Add all ingredients to a large platter or bowl. Drizzle with dressing, toss and serve.
Notes
- Serve this as a side salad with your favourite dinner anytime of year!
- Make 2 large salads and top with your favourite protein.
