Description

Start by heating a skillet over medium-high heat and cooking potatoes with butter, olive oil, minced garlic, dried oregano, rosemary, salt, and pepper. This allows the potatoes to soften and develop flavor from the garlic and herbs. Stirring occasionally ensures even browning and cooking until tender, usually about 8–10 minutes total.

After removing the potatoes, increase the heat to high and add more butter before adding sirloin steak chunks in a single layer. Searing without turning initially creates a crust, then stirring finishes cooking to desired doneness over a few minutes. The steak is cooked quickly to maintain tenderness without overcooking.

The potatoes return to the pan to combine with the steak bites, allowing flavors to meld. A sprinkle of fresh parsley adds a fresh note to the earthy and rich components. The dish stands well on its own or as part of a meal.

Alternate cuts of beef like filet mignon, ribeye, or New York strip can be used. Red potatoes work best for the texture, while russets tend to become watery. If potatoes brown too fast before becoming tender, turning heat lower, adding some warm water, and covering the pan helps finish cooking without burning.

  • 4 tablespoons butter divided in half
  • 1 tablespoon olive oil
  • 1 pound Yukon Gold potato cut into ½ inch chunk, or Red potatoes
  • 4 garlic minced, cloves
  • 1 teaspoon oregano dried
  • 1 teaspoon rosemary dried
  • ½ teaspoon salt
  • ½ teaspoon black pepper
  • 1 ½ pounds sirloin steak cut into 1 inch chunks

Instructions

  1. Heat a cast iron skillet or non stick skillet over medium high heat.
  2. Add 2 tablespoons of butter and olive oil to the pan heat until butter is melted.
  3. Add potatoes, garlic, oregano, rosemary, salt and pepper.
  4. Cook for about 4-5 minutes
  5. Stir and cook for an another 4-5minutes or until fork tender.
  6. Remove potatoes from pan and set aside in a bowl.
  7. Return the skillet to stove and turn stove to high heat.
  8. Add the remaining 2 tablespoons of butter.
  9. Add the steak bites in a single layer and cook for 1 minute, not turning.
  10. Then stir the steak bites for another 1-2 minutes or until desired doneness.
  11. Remove the skillet from heat and add the potatoes to the cook steak and toss together.
  12. Top with fresh chopped parsley, if desired

Notes

  • Use red or Yukon Gold potatoes for best texture; avoid russet potatoes which may become watery.
  • If potatoes brown too quickly and are not tender, lower heat to medium-low, add warm water, cover, and finish cooking 3-4 minutes.
  • Sirloin steak is ideal; filet mignon, ribeye, New York strip, or stir fry beef can be substituted based on preference.
