Buttered Noodles

Buttered Noodles feature egg noodles or pappardelle tossed with melted salted butter, Parmesan cheese, and a blend of dried herbs and garlic powder. Lemon juice and a small amount of pasta water enhance the flavor and help create a light sauce that clings to the noodles, resulting in tender and flavorful pasta suited for simple meals or side dishes.

Description

In this Buttered Noodles recipe, cooked pasta like egg noodles or pappardelle is combined with melted butter and a seasoning mix of freshly grated Parmesan, oregano, parsley, and garlic powder. The reserved warm pasta water mixes with lemon juice and the seasoning blend to form a light sauce that coats each noodle evenly, giving the dish a harmonious balance of creamy, cheesy, and herbal notes with a hint of brightness from the lemon juice.

The preparation involves cooking the pasta in salted boiling water, optionally enhanced with chicken bouillon for deeper flavor. Once drained, the pasta is returned to the pot with melted butter before the cheese and herb mixture is added along with the seasoned pasta water to finish the dish. Tossing with kitchen tongs ensures all noodles are properly coated.

Buttered Noodles can be served alongside garlic bread with cheese for a comforting, straightforward meal or as a side accompaniment to proteins or vegetables. Using high-quality butter and freshly grated Parmesan cheese impacts the flavor positively, and the herbs add freshness to the rich butter and cheese base.

Ingredients

Servings
  • 8 oz. pasta egg noodles or pappardelle work well
  • ¼ cup pasta water
  • ½ chicken bouillon cube optional
  • 4 tablespoons butter salted
  • ½ cup Parmesan Cheese freshly grated
  • ½ teaspoon dried oregano
  • ½ teaspoon dried parsley
  • ¼ teaspoon garlic powder
  • 1 Tablespoon lemon juice freshly squeezed

Instructions

  1. Combine shredded Parmesan cheese, oregano, parsley, and garlic powder in a small, sealable plastic or glass container (so you can add pasta water and shake to combine later). Set aside.
  2. Begin boiling pasta water. Once a boil is reached, salt it generously. (I use 1/2 tbsp. Kosher salt.)
  3. Add the pasta and cook according to package instructions. Reserve ¼ cup of pasta water and drain the rest.
  4. Optional: Combine the warm pasta water with 1/2 chicken bouillon cube for even more flavor!
  5. Add the butter to the warm pot that you boiled the pasta in and allow it to melt. Then add the pasta and toss to combine.
  6. Combine the reserved pasta water, lemon juice, and Parmesan cheese/seasonings. Shake to combine and pour it over the pasta.
  7. Use kitchen tongs to toss until combined and serve with garlic bread with cheese.

Notes

  • Use quality salted butter and grate Parmesan cheese from a block for best flavor and texture.
  • Egg noodles, fettuccine, or pappardelle are recommended pasta choices; pappardelle adds a broad, flat texture.
  • Adding bouillon cubes to boiling pasta water boosts the noodles’ flavor when cooking.
  • Freshly squeeze lemon juice for brightness and balance against the rich butter and cheese.
