  • 2 pounds potato such as Yukon Gold or Russet, peeled and cut into 1"-2" chunks
  • 8 tablespoons unsalted butter divided
  • ½ cup buttermilk at room temperature, whole
  • ½ teaspoon kosher salt
  • black pepper to taste, freshly ground
  • 4 tablespoons chive divided, chopped, fresh

Instructions

  1. Place prepared potatoes in a large pot and cover with cold water. Season thewater with salt.
  2. Bring the water to a boil over high heat, then reduce the heat to medium-low and simmer until the potatoes are tender when pierced easily with a fork,about 15-20 minutes.
  3. Drain the potatoes and return them to the pot.
  4. Add 6 tablespoons of the butter to the potatoes and mash with a potato masher until smooth and creamy. Then add buttermilk, salt, and pepper. Combine until mixture is fully incorporated. If needed, add a bit more buttermilk.
  5. Taste the potatoes and adjust the salt and pepper as needed. Stir in 3 tablespoons of the chopped fresh chives.
  6. Serve the mashed potatoes hot, garnished with the remaining 2 tablespoons butter and 1 tablespoon of chives, if desired.
