This easy recipe for Butternut Squash Fritters with Spiced Yogurt makes a unique and addictive appetizer or side dish for Thanksgiving. Adapted from Alison Roman.

Ingredients
For the Fritters:
- 1 butternut squash peeled, seeded and grated on a box grater
- 1 yellow onion halved, peeled and sliced as thin as possible, medium-large or sweet onion
- 4 tablespoons olive oil divided
- ¾ cup chickpea flour
- 2 tablespoons corn starch
- 1 teaspoon baking powder
- 1 teaspoon salt
- black pepper freshly ground, to taste
- 1 egg
- sea salt such as Maldon, for sprinkling, flaky
For the Spiced Yogurt:
- ¾ cup Greek yogurt plain, whole milk
- 1 garlic very finely minced, small clove
- ½ teaspoon cumin
- ½ teaspoon Coriander
- ½ teaspoon smoked paprika
- ½ teaspoon salt
- 2 teaspoons lime juice
Notes
- * I use the grater attachment on my food processor to make quick work of the squash and a mandoline to make super thin, even slices of onion.

- The fritters can be fried, then stored in an airtight container in the refrigerator for up to 3 days in advance, as can the yogurt. Reheat the fritters in a 350 degree oven for about 15 minutes, or until hot and crispy.
