Butternut Squash Fritters with Spiced Yogurt

This easy recipe for Butternut Squash Fritters with Spiced Yogurt makes a unique and addictive appetizer or side dish for Thanksgiving. Adapted from Alison Roman.

Ingredients

Servings

For the Fritters:

  • 1 butternut squash peeled, seeded and grated on a box grater
  • 1 yellow onion halved, peeled and sliced as thin as possible, medium-large or sweet onion
  • 4 tablespoons olive oil divided
  • ¾ cup chickpea flour
  • 2 tablespoons corn starch
  • 1 teaspoon baking powder
  • 1 teaspoon salt
  • black pepper freshly ground, to taste
  • 1 egg
  • sea salt such as Maldon, for sprinkling, flaky

For the Spiced Yogurt:

  • ¾ cup Greek yogurt plain, whole milk
  • 1 garlic very finely minced, small clove
  • ½ teaspoon cumin
  • ½ teaspoon Coriander
  • ½ teaspoon smoked paprika
  • ½ teaspoon salt
  • 2 teaspoons lime juice

Notes

  • * I use the grater attachment on my food processor to make quick work of the squash and a mandoline to make super thin, even slices of onion.

  • The fritters can be fried, then stored in an airtight container in the refrigerator for up to 3 days in advance, as can the yogurt. Reheat the fritters in a 350 degree oven for about 15 minutes, or until hot and crispy.
