Ingredients

  • 1 lb butternut squash peeled and diced into ¼ inch cubes
  • 1 large sweet potato peeled and diced into ¼ inch cubes
  • 4 celery ribs diced
  • 1 red onion finely minced
  • 8 sage leaves minced
  • 1 rosemary sprig leaves removed
  • 4 tablespoon parsley leaves and stalks chopped
  • 3 tablespoon avocado oil
  • ½ teaspoon salt
  • ¼ teaspoon pepper

Instructions

  1. Heat oil in a large saute pan over medium heat. Add butternut squash, sweet potato, celery, red onion, sage, rosemary and parsley.
  2. Add salt and pepper and give everything a nice stir. Cook over medium-low heat for about 15 to 20 minutes or until the vegetables are tender.
  3. Adjust the seasoning to your liking and serve immediately.
