Ingredients
- 1 lb butternut squash peeled and diced into ¼ inch cubes
- 1 large sweet potato peeled and diced into ¼ inch cubes
- 4 celery ribs diced
- 1 red onion finely minced
- 8 sage leaves minced
- 1 rosemary sprig leaves removed
- 4 tablespoon parsley leaves and stalks chopped
- 3 tablespoon avocado oil
- ½ teaspoon salt
- ¼ teaspoon pepper
Instructions
- Heat oil in a large saute pan over medium heat. Add butternut squash, sweet potato, celery, red onion, sage, rosemary and parsley.
- Add salt and pepper and give everything a nice stir. Cook over medium-low heat for about 15 to 20 minutes or until the vegetables are tender.
- Adjust the seasoning to your liking and serve immediately.
