Description
The Buttery Caper Sauce combines diced onions sautéed gently in butter to soften and sweeten, followed by Brazilian sofrito which adds aromatic depth. White wine and fresh thyme are cooked down to concentrate flavor, then thyme sprigs are removed. Capers and fresh lime juice add a salty and tart contrast that brightens the rich butter base. Additional butter is stirred in to create creamy smoothness, then the sauce is seasoned with salt and pepper. Finally, fresh parsley and lime zest are folded in for a fresh herbal lift. This sauce features a balance of creamy, acidic, and savory notes that complement lightly cooked proteins like fish, shrimp, or chicken.
The preparation emphasizes gentle cooking steps to preserve the freshness of the herbs and the brightness of the lime while developing mellow caramelized onion undertones. The minced capers provide bursts of briny flavor that cut through the richness of the butter.
Ingredients
- 1/2 cup onion diced
- 2 tablespoons sofrito or 3 cloves of garlic, minced, Brazilian style
- 6 tablespoons butter unsalted
- 3 tablespoons capers roughly minced
- 1/4 cup white wine
- 4 thyme fresh, sprigs
- 1 tablespoon parsley minced
- 1 tesapoon lime zest from 1 lime
- 1 tablespoon lime juice freshly squeezed
- salt to taste
- black pepper to taste
Instructions
- Melt 2 tablespoons of the butter in a small pan over medium heat.
- Measure in the onions. Let them cook until they are soft and transparent, about 2-3 minutes.
- Add in the Brazilian sofrito and sautee until fragrant, about 1-2 minutes.
- Pour in the wine and the thyme. Cook until the wine has mostly cooked out.
- Remove the thyme and discard, then add the capers, the lime juice, and the rest of the butter. Stir until the butter has melted.
- Give it a taste. Season with salt and pepper to taste.
- Turn off the heat. Add the parsley and the lime zest. Stir to incorporate.
- Serve over fish, shrimp or your favorite protein. (This works great with chicken, too!)
