Buttery Corn Casserole
Description
Buttery Corn Casserole combines canned creamed corn and drained sweet corn with cornbread mix and a blend of dairy ingredients including melted butter, sour cream, and heavy cream. The mixture is smoothed in a lightly greased casserole dish and baked at 350°F until the edges brown and the top turns golden, resulting in a creamy, custardy texture with gentle corn sweetness. Cheese can be incorporated fully or partially, either mixed into the batter or sprinkled on top during baking, adding a savory note and extra richness.
The baking duration of about 40 to 45 minutes ensures that the mixture sets with a tender crumb inside but gains lightly caramelized edges outside. The sour cream and heavy cream add moisture and a creamy mouthfeel that balances the cornbread mix dryness to create a cohesive dish. The sweet corn kernels contribute subtle bursts of texture and natural sugar.
This casserole serves well as a comforting side for poultry, pork, or barbecue meals. Letting it cool slightly before serving helps the casserole firm up for easier portioning. The optional cheese variations provide flexibility for different flavor preferences or textures, allowing some to enjoy a cheesy crust while others prefer a more uniformly creamy interior.
Ingredients
- 14.75 oz creamed corn
- 15.25 oz. sweet corn drained

Notes
- Incorporate up to a full cup of cheddar cheese into the batter before baking for a uniformly cheesy casserole.
- Alternatively, mix half of the cheese into the batter and add the remainder on top during the last 15 minutes of baking to achieve a melted cheesy crust.
- If omitting cheese from the batter, sprinkle the entire cup on top for a golden, melted topping in the final minutes of baking.
