Buttery Garlic and Thyme Roasted Mushrooms

These fabulous roasted mushrooms are tossed and coated in a decadent buttery garlic and thyme sauce then baked in the oven to mushroom lover perfection while you are preparing the rest of your meal!

Ingredients

  • 2 pounds (1kg) button mushrooms whole
  • 1/4 cup butter melted
  • 2 tablespoons olive oil
  • 1 tablespoon garlic minced
  • 1 tsp thyme dried
  • sea salt to taste, cracked
  • black pepper to taste
  • thyme or parsley, fresh, for garnish

Instructions

  1. Preheat the oven to 400 °F.
  2. Clean the mushrooms by wiping with a damp paper towel and trim the stems.
  3. Place the mushrooms in a large bowl.
  4. In a measuring cup with a spout, mix together the melted butter, garlic, thyme and olive oil.
  5. Pour the mixture over the mushrooms in the bowl, and toss the mushrooms to coat completely. Season with the desired amount of salt and pepper, then toss again.
  6. Turn the mushrooms out of the bowl onto a large baking sheet, making sure to scrape the sides of the bowl for any remaining sauce and spices. Arrange the mushrooms in a single layer.
  7. Bake in the oven for 10 minutes, then mix and flip with a spatula. Continue to roast for another 10-15 minutes until the mushrooms reach the desired tenderness. Baking time will depend on how large your mushrooms are.
  8. Remove from the oven and if desired sprinkle with fresh thyme or parsley as a garnish
  9. Serve.

Notes

  • you can use other types of mushrooms if desired
