Cabbage and Sausage Foil Packets
Description
Cabbage and Sausage Foil Packets involve layering seasoned pieces of smoked sausage, cabbage, small potatoes, and onion on foil sheets sprayed to prevent sticking. Each packet is topped with garlic butter, salt, pepper, and ice cubes that add steam during grilling. The sealed packets are cooked on a 400°F grill, flipped periodically to ensure even cooking over about 50 minutes, allowing the flavors to meld and the vegetables to soften while sausage becomes heated through.
This method locks moisture inside the packets, yielding tender cabbage, creamy potatoes, and savory sausage with a rich, buttery flavor. The gentle steaming from ice cubes accelerates cooking and helps maintain vegetable texture. Sour cream can be added as a cool creaminess contrast when serving.
If preferred, these packets can be baked in the oven at 425°F for 35–40 minutes until potatoes are fork-tender. Doubling the foil can prevent leaks, and portioning about one cup of potatoes per serving works well. This recipe provides a convenient grilling option for a hearty and satisfying meat and vegetable combination.
Ingredients
- 1 pound smoked sausage cut into 1-inch pieces, I use Polish sausage
- ½ head green cabbage cut into ½-inch wedges
- 20 small potato or yellow quartered, red
- 1 small onion sliced
- butter store bought or homemade, with garlic
- salt to taste
- black pepper to taste
- 4 ice cubes
Instructions
- Preheat your grill to 400°F.
- Cut four 18 x 12 inch sheets of foil. Spray well with non-stick spray.
- Divide the cabbage, potatoes and onion over the foil sheets.
- Add 1 ice cube to each mound.
- Evenly divide the sausage between the packets and top with garlic butter (1-2 tablespoons per packet), salt and pepper.
- Seal each packet well and place on grill.
- Grill for 50 minutes flipping from the packets every 15 minutes.
- Allow to rest 10 minutes before serving.
- Serve with sour cream if desired.
Notes
- Oven baking at 425°F for 35–40 minutes is an alternative if a grill isn’t available.
- Adjust potato quantity to just over 1 cup diced or cubed per serving for even portions.
- If concerned about foil leaks, double wrap the packets for safety.
