Cabbage and Sausage Recipe
Description
This Cabbage and Sausage recipe starts by browning slices of smoked Polska Kielbasa in olive oil to develop a flavorful crust. The sausage is set aside while the chopped vegetables—including cabbage, bell pepper, onion, carrot, and minced garlic—cook covered in a skillet with additional olive oil until tender. The sausage and water are then returned to the pan before covering it to finish cooking in the oven, allowing the ingredients to meld and the cabbage to soften further.
The dish offers a combination of smoky sausage richness and sweeter, tender vegetables with a touch of caramelization after the foil is removed for the final few minutes. The cooking method ensures well-integrated flavors and a balance of textures from the different veggies.
Serve warm as a filling entrée or alongside other dishes. The recipe lends itself to personalization with herbs and seasonings. Browning the sausage well is key to maximizing flavor. Using a high-quality oven-safe skillet enhances heat distribution and flavor development. The covered cooking step traps moisture for tender cabbage without drying out.
Options include adding smoked paprika, apple cider vinegar, or red pepper flakes to adjust flavor and heat to taste. Uniform vegetable cuts help ensure even cooking.
Ingredients
- 2 Tablespoon olive oil
- 1 lb smoked sausage sliced, Polska Kielbasa
- 1 cabbage or only 1/2 if it's a large cabbage, head
- 1 bell pepper roughly chopped, red
- 1 onion chopped
- 2 carrot shredded
- 3 garlic minced, cloves
- salt
- black pepper
- 1 cup water
Instructions
- Preheat oven to 350 F.
- Heat 1 Tbsp of olive oil in a large skillet. Cook sausage for a couple of minutes per side to brown on both sides. Transfer cooked sausage to a plate.
- Add another Tbsp of olive oil in the skillet and heat over medium-high heat. Add the vegetables, and cook covered for about 5 -7 minutes until tender, stirring occasionally.
- Add sausage and 1 cup water to the skillet, stir everything, and place in the preheated oven. Cook covered with a foil for about 25 minutes. Remove foil, and cook for another 5 minutes. Serve warm.
Notes
- Browning the sausage thoroughly develops deeper flavor from the crust; don't rush this step.
- Slice vegetables evenly for consistent tenderness and texture throughout the dish.
- Keep the skillet covered during oven cooking to trap moisture and soften cabbage effectively.
- Using an oven-safe cast iron or Staub skillet improves heat retention and flavor.
- Customize seasoning with smoked paprika, apple cider vinegar, or red pepper flakes to suit your preference.
