Cabbage Casserole

The Cabbage Casserole combines sautéed green cabbage and diced onion with a creamy layer made from condensed cream of mushroom soup, mayonnaise, and garlic powder. It is topped with a crunchy mixture of crushed Ritz crackers, melted butter, and shredded aged cheddar cheese, then baked until golden brown. The dish balances soft cooked cabbage with a flavorful, crisp topping, making it a comforting baked vegetable side or main that is satisfying and simple to prepare.

Description

Cabbage Casserole features chopped green cabbage and onion sautéed in butter until tender, then layered in a casserole dish. A creamy mixture of condensed cream of mushroom soup, mayonnaise, and garlic powder is spread over the cabbage to add moisture and richness. The topping is a blend of crushed buttery crackers, melted butter, and shredded old cheddar cheese, which crisps nicely during baking. This combination results in a casserole with a soft, flavorful interior contrasted by a crunchy, cheesy crust. The baking temperature of 350°F allows the flavors to meld and the topping to brown evenly.

The casserole works well as a vegetarian main dish or a hearty side that pairs with meats or other protein sources. The creamy topping adds depth while the sautéed cabbage brings mild earthiness and tenderness. The recipe is straightforward and relies on common pantry ingredients, making it accessible and practical for home cooks.

The original recipe notes mention an option to include cooked ground beef, which can be incorporated after the cabbage is sautéed to enrich the dish and provide additional protein. This variation enhances the casserole's heartiness, transforming it into a more complete meal suitable for those who enjoy meat.

Ingredients

Servings
  • 1 green cabbage (small)
  • 1 yellow onion diced, or white onion, sweet
  • ½ cup butter salted
  • One oz condensed cream of mushroom soup from can
  • ¼ cup mayonnaise
  • ½ teaspoon garlic powder
  • black pepper to taste

Topping

  • cup butter melted
  • 1 cup old cheddar cheese (shredded)
  • 30 Ritz crackers (or other buttery cracker - crushed)

Instructions

  1. Preheat your oven to 350°. Lightly grease a 8x8 baking pan or a 2-quart casserole dish.
  2. Chop the cabbage but leave out the center core if it is too dense / thick.
  3. In a large saucepan add the butter and melt it and add in the chopped cabbage and onion. Saute for about 8-10 minutes stirring often until the cabbage cooks down.
  4. Season with pepper to taste.
  5. Transfer cabbage mixture to prepared baking dish.
  6. In a small bowl, add the soup, mayonnaise and garlic powder and mix well. Spread this mixture over the cabbage in your pan.
  7. In a separate small bowl, crush the Ritz crackers then drizzle the melted butter over top and stir. Add in the grated cheddar cheese and stir to combine. Sprinkle this mixture over top of the cabbage in the baking pan.
  8. Bake for 30 minutes or until the topping is nicely browned.
  9. Remove from the oven, let sit for 5 minutes before serving.

Notes

  • Ground beef can be added by cooking and draining one pound of lean beef, then mixing it back with the sautéed cabbage and onions before baking.
