Cabbage Roll Soup

Cabbage Roll Soup combines ground beef, rice, vegetables, tomato paste, cabbage, and cream into a comforting, hearty dish reminiscent of traditional cabbage rolls in soup form. It offers a savory, thick broth with tender cabbage and rice, making it an approachable way to enjoy familiar flavors with less effort.

Description

This Cabbage Roll Soup recipe starts with browning ground beef and cooking chopped carrots and onions in the same pot, which builds a flavorful base. Seasoned with salt and pepper, the mixture then incorporates rice, tomato paste, bay leaves, water, and chicken broth, simmering together to meld flavors. Half of the shredded cabbage is added later to retain some texture and cook through, adding mild sweetness and earthiness. When the cabbage is tender, heavy cream is stirred in off-heat, enriching the soup with a creamy consistency.

The resulting soup balances the savory meat and umami tomato with the freshness of cabbage and subtle sweetness from carrots. The rice adds heartiness, thickening the broth moderately. Cooking the ingredients in one pot simplifies the preparation while preserving layers of flavor. The creamy finish softens acidity and enhances mouthfeel.

This soup suits colder days or meals seeking familiar comfort with less fuss than traditional cabbage rolls. It can stand alone as a filling main or serve alongside bread for a complete meal.
