Description

The Cabbage Soup starts by gently cooking onions, carrots, and celery in olive oil until softened, building a flavorful base. Garlic and a blend of dried herbs including oregano, basil, and parsley flakes are stirred in to deepen the aroma. Chopped cabbage is then added and lightly cooked before pouring in vegetable broth, fire-roasted tomatoes, and white wine vinegar. The soup simmers to meld flavors and tenderize the cabbage.

The result is a broth-filled soup with tender but slightly crisp cabbage and softened vegetables accented by herbaceous and slightly tangy notes. The fire-roasted tomatoes contribute a subtle smoky sweetness balanced by the vinegar’s brightness.

  • 2 Tbsp olive oil
  • 1 yellow onion diced
  • 2 carrot chopped
  • 3 celery diced, stalks
  • 3 cloves garlic minced
  • 1 tsp oregano dried
  • 1 tsp basil dried
  • 1 tbsp dried parsley flakes
  • ½ tsp salt sea salt
  • ½ cabbage cored and chopped into 1 inch pieces, head
  • 2 cans fire roasted tomatoes (14.5 ounce cans, undrained)
  • 4 cups vegetable broth
  • 2 tbsp white wine vinegar
  • black pepper fresh ground, for taste
  • parsley for garnish, fresh

Instructions

  1. Heat the olive oil in a dutch oven over medium heat. Add the carrots, onion and celery and cook for 5-7 minutes or until the onions are soft.
  2. Add the minced garlic, oregano, basil, salt, parsley flakes and fresh ground pepper. Stir for another minute.
  3. Add cabbage into the dutch oven, stirring frequently for 3-4 minutes. Then add vegetable broth, fire roasted tomatoes and white wine vinegar.
  4. Cover and simmer for 20 minutes.
  5. Remove from heat and stir soup. Garnish with fresh parsley and serve.
