Cabbage Soup
Description
The Cabbage Soup recipe centers on a medley of vegetables simmered into a flavorful broth. Key ingredients include chopped green cabbage, diced Yukon gold potatoes, white beans, fire-roasted diced tomatoes, and aromatic vegetables like carrots, celery, onion, and garlic. A touch of white wine vinegar adds a subtle acidity that brightens the soup's profile. Cooking slowly over medium heat, the vegetables soften and meld their flavors over 20 to 30 minutes, resulting in a tender texture throughout.
This soup's character lies in its balance of textures—the softness of the potatoes and cabbage contrasts gently with the beans, while the simmered base is seasoned simply with sea salt, black pepper, and thyme to let the ingredients shine. Garnishing with fresh parsley adds a fresh herbal note and visual appeal.
Cabbage Soup can be served as a single-course meal, especially on cooler days, or paired with crusty bread for a satisfying lunch or dinner. The recipe's straightforward nature and use of common ingredients make it easy to prepare and adjust according to taste preferences.
