Description
Cabbage Soup brings together diced onion, chopped green cabbage, canned diced tomatoes with juices, shredded carrot, and broth cooked with tomato paste, Italian seasoning, parsley, and a bay leaf. The onions are sautéed until tender before adding the cabbage to soften. After all ingredients are combined and brought to a boil, the soup gently simmers until the cabbage is tender.
The soup balances the fresh sweetness of cabbage and carrot with the acidity and depth of tomatoes and broth. The herbs add subtle earthiness and brightness. The texture includes softened but not mushy cabbage, complemented by the broth's body and chunks of vegetables.

Ingredients
- 2 teaspoons olive oil
- ½ medium onion diced
- 6 cups green cabbage chopped
- 14 ounces diced tomatoes with juices, 1 can, canned
- 6 cups beef broth or chicken broth
- 1 carrot shredded
- 1 tablespoon tomato paste
- 1 tablespoon parsley or 1 teaspoon dried parsley leaves, chopped, fresh
- 1 teaspoon Italian seasoning
- 1 bay leaf
Instructions
- In a large pot, cook onion in olive oil until tender, 3-4 minutes.
- While onion is cooking, dice cabbage into ½" pieces. Add cabbage to the pot and cook over medium heat until it starts to soften, about 8 minutes.
- While cabbage is cooking prepare other ingredients. Add all ingredients to the pot, bring to a boil and simmer uncovered 15 minutes or until cabbage is tender.
- Discard bay leaf, season with salt & pepper to taste and serve.
Notes
- Additional spices such as red pepper flakes, basil, or fresh parsley can be added to adjust flavor.
- Cooked meats like ham, sausage, or chicken may be incorporated for added protein.
- If adding pasta, cook it separately and add to individual bowls to prevent overcooking.
