Cabbage Soup with Sausage

Cabbage Soup with Sausage is a hearty soup featuring smoked kielbasa, shredded cabbage, and vegetables simmered in chicken broth and diced tomatoes. The sausage adds smoky richness while the cabbage and vegetables soften to a tender texture. This layered soup balances savory and slightly sweet flavors, making it a filling meal especially suited for cooler days.

Description

This soup starts by browning sliced smoked kielbasa sausage to bring out its smoky flavor, then cooking diced onion, carrot, and celery in the rendered fat with butter. Garlic is briefly sautéed to release aroma without browning. The sausage is returned to the pot along with tomatoes, tomato paste, dried thyme, salt, pepper, and chicken broth. After adding shredded cabbage, the soup simmers gently until the vegetables are tender.

The blend of ingredients yields a broth rich with smoky sausage and tomato notes, punctuated by tender cabbage and root vegetables. The cabbage softens but retains enough texture to contrast with the firm sausage slices. The soup’s flavor benefits from thyme and garlic accents, while simmering allows the ingredients to meld.

This satisfying soup works as a main dish for lunch or dinner. The smoky sausage makes it hearty, while vegetables keep it balanced. It can be enjoyed on its own or with bread. The recipe offers a comforting option that leverages simple ingredients for wholesome flavor.
