Ingredients
- 14 ounces smoked kielbasa sausage sliced
- ½ cabbage shredded, large head
- 6 cups chicken broth
- ½ yellow onion diced
- 14.5 ounce diced tomatoes lowest carb, canned
- 1 carrot sliced
- 1 celery sliced, rib
- 3 cloves garlic
- 1 tablespoon tomato paste
- 1 tablespoon olive oil
- 1 tablespoon butter
- 1 teaspoon thyme dried
- 1 teaspoon salt divided
- ¼ teaspoon black pepper ground
- Optional: pinch of red pepper flakes
Instructions
- Heat a large pot or Dutch oven to medium and add in the olive oil and smoked sausage.
- Sauté for a few minutes, or until they’re starting to brown, then remove and set aside.
- Add in the butter and once melted, add in the onion, carrot, celery, half the salt and pepper. Sauté for a few minutes, the add in the garlic.
- Sauté for about 15 seconds, making sure you don’t brown it, then add the sausage back in, along with the diced tomatoes, tomato paste, dried thyme, remaining salt, chicken broth and bring to a simmer.
- Turn the heat down to medium low and add in the cabbage. With the lid slightly offset, simmer for 35 minutes or until the celery, carrots and cabbage are tender.
