Description

Cacik Turkish Yogurt and Cucumber features plain yogurt thinned with water to a drinkable consistency, combined with grated cucumbers which are sometimes squeezed to remove excess moisture to prevent dilution. Minced garlic and dried mint provide depth and herbal notes, while salt enhances the flavors. A drizzle of olive oil on serving adds richness.

The dish is served cold, making it crisp and soothing on warm days. Mini or Persian cucumbers are recommended for their smaller seeds and tender texture, which keep the cacik smooth. This is a traditional Turkish accompaniment often served alongside meals or as a cooling snack.

To maintain its texture and freshness, leftovers should be stored sealed in the refrigerator and consumed within two days. Stir the cacik before serving again. The recipe is flexible to use non-dairy yogurts, provided they are plain and unsweetened. Leaving out water results in a thicker consistency.

Ingredients

  • 2 cups PLAIN yogurt
  • 1 cup water
  • 4 cucumber or mini cucumbers, Persian
  • 3 cloves garlic minced
  • 1/2 tsp salt
  • 1 1/2 tsp dried mint
  • 1 tbsp olive oil

Instructions

  1. Whisk the yogurt in a large bowl to make sure it's smooth. Add water to the yogurt and whisk until it's completely incorporated. 
  2. Grate the cucumbers in another bowl and if they're too watery, squeeze out the excess water. If they're not too watery, add the directly to the yogurt and water. 
  3. Mix well and add garlic, salt and dried mint. Taste and add more salt if needed. 
  4. Chill cacik yogurt and cucumber in the fridge for 30 minutes before serving. 
  5. To serve, divide it between 4 bowls and top each with a little bit of olive oil. 

Notes

  • Use mini or Persian cucumbers with small seeds for the best texture and flavor.
  • Store leftovers airtight in the refrigerator and consume within 2 days, stirring before serving.
  • Non-dairy plain yogurt can be substituted if unsweetened and unflavored.
  • Omitting water makes a thicker cacik.
