Description

  • 1 tablespoon Cajun seasoning divided, 2 teaspoons
  • 2 tablespoons butter unsalted
  • 2 teaspoons olive oil
  • 1 bell pepper sliced
  • ¾ cup diced tomatoes (150g)
  • 3 garlic minced, cloves
  • 1 cup heavy whipping cream (240mL)
  • cup Parmesan Cheese 28g, grated
  • 4 ounces cream cheese (112g)
  • ¼ teaspoon black pepper ground
  • parsley chopped, fresh

Instructions

  1. Bring a large pot of water to a boil over high heat. Add the salt and the pasta and cook according to the package directions. Drain the pasta, reserving 1/4 cup of pasta water.
  2. While the pasta cooks, toss the chicken with 1 tablespoon of cajun seasoning.
  3. In a large skillet, heat the butter and oil over medium-high heat. Add the chicken and brown on all sides. Add the bell pepper and cook until tender, about 6 minutes. Stir in the tomatoes and garlic and cook for 1 minute.
  4. Reduce the heat to medium-low and stir in the cream, parmesan, cream cheese, remaining 2 teaspoons of cajun seasoning, and black pepper. Cook until the cheese melts and the sauce is smooth and creamy.
  5. Add the pasta and toss until combined and heated through. Add some of the reserved pasta water to thin sauce, if desired. Serve immediately, garnished with more parmesan and parsley.
