Cajun Hot Shrimp Dip Recipe (with Cream Cheese)

The Cajun Hot Shrimp Dip combines sautéed shrimp with a creamy blend of cream cheese, mayonnaise, and cheddar cheeses, all seasoned with Cajun spices and fresh vegetables like red bell pepper, onion, and garlic. The dip bakes until bubbly and golden, offering a thick, flavorful appetizer with a spicy, savory profile. It works well served warm with crackers, chips, or vegetables.

Description

This recipe starts by softening diced red bell pepper, onion, and minced garlic in butter, forming a flavorful base. Raw shrimp, either small or popcorn style, are then added with Cajun seasoning to provide a spicy kick. After a brief sauté, cream cheese, mayonnaise, shredded cheddar, Parmesan, scallions, and lemon juice are stirred in to create a thick, creamy mixture. Optionally, hot sauce can be added for more heat.

The mixture is transferred to an oven-safe skillet or baking dish, topped with additional Parmesan cheese, and baked at 400°F until the edges bubble and turn golden. The final dip is rich and thick enough to scoop easily, melding spicy shrimp with creamy cheeses and aromatic scallions.

Serve the dip warm alongside crackers, tortilla or potato chips, or vegetable sticks for dipping. It makes a flavorful party appetizer or snack with contrast between the creamy filling and the crisp dippers. The recipe notes suggest that if a suitable skillet is absent, a baking dish can be used to finish the dip in the oven after stovetop preparation.

Ingredients

Servings
  • 1 pound Shrimp popcorn shrimp for less chopping, small, raw
  • 2 tablespoons butter
  • 1 whole red bell pepper seeded and chopped
  • ½ onion peeled and chopped, sweet
  • 3-4 cloves garlic minced
  • 2 teaspoons Cajun seasoning (Creole seasoning)
  • 8 ounces cream cheese
  • ½ cup mayonnaise
  • 2 cups cheddar cheese shredded
  • ½ cup Parmesan Cheese grated
  • 2/3 cup scallions chopped
  • 1 tablespoon lemon juice
  • 1-2 teaspoons hot sauce optional, Louisiana

Instructions

  1. Preheat the oven to 400 degrees F. Then set a large oven-safe skillet over medium heat.
  2. Add the butter, chopped bell pepper, chopped onion, and garlic in the skillet. Sauté for 3-5 minutes to soften.
  3. If using “popcorn” shrimp there is no need to chop it. However, if you are using larger shrimp, roughly chop into small ½ inch pieces. (Small enough to scoop up on crackers.)
  4. Once the vegetables are softened, add the shrimp and Cajun seasoning. Sauté for 1-2 minutes.
  5. Stir in the cream cheese, mayonnaise, cheddar cheese, ¼ cup parmesan cheese, scallions, lemon juice, and hot sauce. Stir until the cream cheese, and shredded cheese melts into a thick sauce. Turn off the heat.
  6. Sprinkle the top with the remaining ¼ cup parmesan cheese. Bake for 12-15 minutes, until the edges are bubbly. Serve warm with crackers, tortilla chips, potato chips, or cut vegetables.

Notes

  • If you don’t have an oven-safe skillet, prepare the dip on the stovetop then transfer to a 9x9 inch baking dish for baking.
