  • 12 ounces andouille sausage sliced, or kielbasa
  • 4 cloves garlic minced
  • 3 tablespoons tomato paste
  • 1 ¾ cups chicken broth low-sodium
  • 1 ¼ cups instant white rice
  • Cajun seasoning
  • 1 tablespoon parsley chopped, fresh

Instructions

  1. Heat a large skillet over medium heat.
  2. Once the skillet is hot, add the oil and then the bell peppers, celery, and onion. Sauté for 4-5 minutes, or until softened.
  3. Stir in the sausage and cook until browned on both sides, about 5 minutes.
  4. Add the garlic and cook for 30 seconds.
  5. Stir in the tomato paste, and cook, stirring the entire time, for 1 minute.
  6. Stir in the chicken broth and bring to a simmer. Stir in the rice.
