Cajun Sausage and Rice
Description
This Cajun Sausage and Rice recipe starts with a sauté of diced red and yellow bell peppers (or green), celery, and onion in olive oil until softened, providing a savory vegetable base. Sliced andouille sausage or kielbasa is browned for a smoky, robust flavor, then minced garlic and tomato paste are added to deepen taste complexity.
Chicken broth is stirred in along with instant white rice, allowing the rice to cook covered for 5 minutes until tender and infused with the combined flavors. Cajun seasoning is adjusted to taste at the end, offering a mild heat and seasoning accent. Fresh parsley is sprinkled on top for herbaceous brightness.
The method relies on white instant rice for consistent cooking time and texture, ensuring the grains absorb enough liquid without becoming mushy. This dish works well as a packed, savory meal featuring both protein and vegetables with a reasonable cook time.
Ingredients
- 1 tablespoon olive oil
- 1 cup red bell pepper diced
- 1 cup yellow bell pepper diced, or green bell pepper
- 1 cup celery diced
- 1 cup white onion diced, or yellow onion
- 12 ounces andouille sausage sliced, or kielbasa
- 4 cloves garlic minced
- 3 tablespoons tomato paste
- 1 ¾ cups chicken broth low-sodium
- 1 ¼ cups instant white rice
- Cajun seasoning
- 1 tablespoon parsley chopped, fresh
Instructions
- Heat a large skillet over medium heat.
- Once the skillet is hot, add the oil and then the bell peppers, celery, and onion. Sauté for 4-5 minutes, or until softened.
- Stir in the sausage and cook until browned on both sides, about 5 minutes.
- Add the garlic and cook for 30 seconds.
- Stir in the tomato paste, and cook, stirring the entire time, for 1 minute.
- Stir in the chicken broth and bring to a simmer. Stir in the rice.
- Cover, and cook for 5 minutes, stirring occasionally.
- Remove from heat.
- Stir in the Cajun seasoning to taste.
- Sprinkle with chopped parsley.
Notes
- Use only white instant rice to match the cooking time and liquid requirements as brown or regular rice will cook differently.
- Adjust Cajun seasoning to your preferred spice level but note the default amount is balanced for mild heat.
