Description

This recipe begins by seasoning quality scotch fillet (ribeye) steaks liberally on both sides with Cajun spice mix. By tenderizing the meat with a fork, the spice mix is encouraged to penetrate more deeply. After seasoning all steaks, any remaining spice mix is rubbed over the surfaces. The steaks are placed in a container or tray and covered carefully with vegetable oil, ensuring the oil does not wash the spices off.

The steaks marinate refrigerated for 36 to 48 hours to allow the oil and spices to develop flavor and tenderness. After marinating, steaks are removed from oil and allowed to drain briefly on a perforated surface for 15-20 minutes to remove excess oil. They are then cooked on a preheated barbecue to preferred doneness, preserving the Cajun spice crust and achieving a flavorful outer sear.

  • 300 grams scotch fillet steak x 4, quality, plural
  • 1-2 cup Cajun spice mix
  • 1-2 l vegetable oil
  • container or tray for marinating

Instructions

  1. Lay a steak on a chopping board.
  2. Cover with a liberal sprinkling of spice mix.
  3. Tenderize the meat with a fork, this helps to penetrate the meat with the spice mix.
  4. Turn the steak over and repeat on the other side
  5. Repeat this process for all the steaks.
  6. Rub any remaining spice mix onto the outside of the meat.
  7. Place them in the marinating tray.
  8. Cover with oil, (be careful not to pour directly onto the steak as you will wash the marinade off).
  9. Place the tray in the refrigerator and marinate for 36-48 hours.
  10. Remove the steaks from the oil and place them on a rack or anything perforated for 15-20 minutes to allow all the oil to drain off.
  11. Meanwhile pre-heat your barbecue.
  12. Cook steak to your preference.
