Description
This recipe begins with coating raw shrimp in Cajun seasoning and quickly sautéing them in olive oil until browned, then setting them aside. Andouille sausage slices are browned separately before cooking down aromatics including onion, garlic, red and green bell peppers, mushrooms, and okra with the remaining seasoning. The sausage is returned to the skillet, and a sauce is created by adding chicken broth, heavy cream, and grated Parmesan cheese, which simmers to reduce and thicken, melding the flavors. The shrimp returns to the pan for a final light simmer. Ingredients
- 16 ounces Shrimp raw peeled and deveined
- 8 ounce andouille sausage sliced
- 2 tablespoons Cajun seasoning
- 2 tablespoons olive oil
- 4 cloves garlic minced
- 1 onion diced
- 1 red bell pepper roughly chopped
- 1 green bell pepper roughly chopped
- 8 ounces mushrooms sliced
- 1 cup okra chopped
- 1/2 cup chicken broth
- 2 cups heavy cream
- 1/2 cup Parmesan Cheese grated
Instructions
- Place shrimp in a bowl and coat with one tablespoon of cajun seasoning.
- Place a large cast-iron skillet over medium-high heat and add the olive oil. Once hot, saute the shrimp in it for 3-4 minutes. Once nicely browned, remove and set aside on a plate.
- Add the sausage, brown it for 2-3 minutes, remove and set aside with the shrimp.
- Add the onion to the pan and cook for 2-3 minutes. Add the minced garlic, peppers, mushrooms, okra, and remaining cajun seasoning, sauté for 4-5 minutes, until the peppers are soft.
- Add the sausage back to the pan.
- Add the chicken broth, cream and cheese, stir to combine. Reduce the heat to medium-low and simmer until the sauce reduces in half. Stir from time to time. Taste and adjust for salt and pepper.
- Add the shrimp back to the pan, and bring the mixture to a light simmer.
- Serve over rice, sprinkled with parsley.
