  • 1 lb Shrimp shelled and deveined, medium
  • 1 lb turkey sausage sliced
  • 3 zucchini sliced half inch pieces
  • 2 red bell pepper chopped into 1 inch pieces
  • 1 red onion sliced, large
  • 2 tbsp olive oil
  • 2 tbsp Cajun seasoning seafood seasoning
  • 1 tsp fennel seeds optional

Instructions

  1. Preheat oven to 400°F and line a baking sheet with aluminum foil or parchment paper.
  2. Slice the turkey sausage into half inch pieces. Thaw shrimp if frozen. Shell and devein the shrimp, keeping tails on. Cut the vegetables and place all in a bowl.
  3. Drizzle with olive oil and Cajun Seafood Seasoning. Toss to coat.
  4. Spread on the lined baking sheet and bake for 18-20 minutes total.
  5. Garnish with chopped parsley and serve as is or over pasta if you prefer.
