Cajun Shrimp Boil Foil Packets

Ingredients

  • 4 potato diced, red
  • 2 salmon fillets cut crosswise in half, 6 oz each
  • 1 lb Shrimp peeled and deveined, uncooked
  • 1/2 lb summer sausage diced
  • 2 sweet corn cut in half, ears
  • 2 Tbsp olive oil
  • 1 tsp Cajun seasoning
  • 1/4 tsp black pepper
  • 1 lemon cut into four wedges, medium

Instructions

  1. Cut four pieces of heavy duty foil about 18 in x 12 in.
  2. Divide potatoes, salmon, shrimp, sausage and corn between the four pieces of foil. Drizzle with oil; sprinkle with seasonings. Squeeze lemon juice over top then place squeezed wedges in packets. Foil foil around mixture and seal tightly.
  3. Grill, covered, over medium heat for 12-15 minutes or until fish just begins to flake easily with forks, shrimp turn pink and potatoes are tender. Open foil packets carefully to allow steam to escape.
