Ingredients
- 1 ½ pounds Shrimp peeled, de-veined and tails removed, medium
- 1 tablespoon Cajun seasoning (homemade OR see notes for my easy homemade seasoning)
- lime juice plus additional lime wedges for serving, juice of one lime
- 1 cup red cabbage thinly sliced
- 8 taco-sized flour tortillas
- 2 Mango diced
- ¼ red onion diced
- ¼ teaspoon salt
- ¼ teaspoon chili powder
- ¼ cup cilantro roughly chopped
Instructions
- Combine mangoes, onions, salt, chili powder, cilantro and lime juice in a bowl and stir to combine. Set aside.
- Add shrimp to a large pan or skillet and bring to medium heat. Sprinkle with Cajun seasoning and stir until shrimp is pink and cooked through.
- Assemble tacos by divided cabbage between tortillas. Top with shrimp and mango salsa. Serve immediately with lime wedges for squeezing on top.
Notes
- For homemade Cajun seasoning, combine 1 teaspoon salt, 1 teaspoon garlic powder, 1 1/2 teaspoons paprika, 1/2 teaspoon black pepper, 1/2 teaspoon onion salt, 1/2 teaspoon cayenne pepper, heaping 1/2 teaspoon oregano, and 1/4 teaspoon red pepper flakes.
