Description

  • 1 ½ pounds Shrimp peeled, de-veined and tails removed, medium
  • 1 tablespoon Cajun seasoning (homemade OR see notes for my easy homemade seasoning)
  • lime juice plus additional lime wedges for serving, juice of one lime
  • 1 cup red cabbage thinly sliced
  • 8 taco-sized flour tortillas
  • 2 Mango diced
  • ¼ red onion diced
  • ¼ teaspoon salt
  • ¼ teaspoon chili powder
  • ¼ cup cilantro roughly chopped

Instructions

  1. Combine mangoes, onions, salt, chili powder, cilantro and lime juice in a bowl and stir to combine. Set aside.
  2. Add shrimp to a large pan or skillet and bring to medium heat. Sprinkle with Cajun seasoning and stir until shrimp is pink and cooked through.
  3. Assemble tacos by divided cabbage between tortillas. Top with shrimp and mango salsa. Serve immediately with lime wedges for squeezing on top.

Notes

  • For homemade Cajun seasoning, combine 1 teaspoon salt, 1 teaspoon garlic powder, 1 1/2 teaspoons paprika, 1/2 teaspoon black pepper, 1/2 teaspoon onion salt, 1/2 teaspoon cayenne pepper, heaping 1/2 teaspoon oregano, and 1/4 teaspoon red pepper flakes.
