Cakey Collagen Donuts (gluten-free!)
Description
This recipe yields cakey, gluten-free donuts enhanced with collagen powder for added texture and protein. The batter combines gluten-free baking flour, collagen powder, baking powder, maple syrup, vanilla, avocado oil, egg, and unsweetened non-dairy yogurt. The mixture is poured into donut molds, topped with sprinkles, and baked at 350°F until cooked through. The resulting donuts have a soft interior with a slightly tender crust. Using silicone molds or greased metal pans helps with easy release.
The donuts are mild in sweetness balanced by maple syrup and vanilla, with sprinkles adding a decorative touch. Their gluten-free nature addresses dietary restrictions without compromising softness. Cooling them properly before removal helps maintain shape.
These donuts serve well as a snack, breakfast, or dessert. Different sizes can be made, with smaller molds yielding about eight donuts, larger molds producing six. This recipe requires careful pan preparation to avoid excess moisture in the donuts.
Ingredients
- ¾ cup gluten free baking flour
- ¼ cup collagen powder
- ¾ teaspoon baking powder
- ½ cup maple syrup
- 1 teaspoon vanilla extract
- 1 tbs avocado oil
- 1 egg
- ½ cup Non-Dairy yogurt Unsweetened
- 2 tbs Sprinkles
Instructions
- Preheat the oven to 350 degrees Fahrenheit.
- In a large bowl add the ingredients in one by one saving one tablespoon of sprinkles.
- Mix really well.
- Pour the donut batter into a silicone donut mold. If using a steel donut pan make sure to grease it first.
- Sprinkle the last of the sprinkles onto the top of the donuts.
- Bake for 27 minutes.
- Remove from oven and let cool in the tray for 20 to 30 minutes.
- Pop them out of the donut mold carefully or use a silicone spatula to help take them out of the donut tray and cool further.
Notes
- When using a metal donut pan, grease it lightly and avoid over-greasing to prevent soggy texture.
- The recipe produces about eight medium or six larger donuts depending on mold size; larger donuts are more delicate.
- Verify sprinkles are gluten-free and dairy-free if needed, as some may contain hidden allergens.
- Gather all gluten-free staple ingredients ahead of time to streamline preparation.
