Calico Beans

Cooked in the crock pot this mixture of beans with bacon and ground beef in a delicious sauce is the perfect side dish for summer!

Ingredients

  • 8 oz Bacon
  • 1 lb ground beef recommend 85%
  • 1 c. chopped yellow onion
  • ½ c. light brown sugar packed
  • 1 Tbsp dry mustard
  • 2 cans pork and beans 15 oz each
  • 15 oz lima beans drained
  • 15 oz butter beans drained
  • 16 oz Kidney Beans drained
  • ½ c. ketchup
  • 1 Tbsp white vinegar
  • salt and pepper to taste

Instructions

  1. In a large skillet, fry bacon until crisp, remove bacon to paper towels and let drain. Leave about 2 tsp of bacon drippings in the skillet, discard the remaining drippings.
  2. Heat skillet with drippings over medium heat and add the ground beef and chopped onions. Cook until beef is browned. Drain off grease.
  3. Transfer ground beef to a crock pot. Add the rest of the ingredients to the crock pot.
  4. Cook on low for 3-5 hours.

Notes

  • Can you make them ahead?You have two options for making them ahead.
  • One way is to cook the beef and onion and combine them with the rest of the ingredients. Instead of slow cooking them, store the mixture in a container and keep it in the refrigerator. Then just pop it in the crock pot when you’re ready to cook it.
  • You can also do all the steps and then let the dish cool and store it in the fridge and warm them up later. Either way works!
  • How long do leftovers keep?Leftovers will keep in the refrigerator for three to four days.
  • Can you bake them in the oven instead?Yes, you can place all of the ingredients in a baking dish and bake for about an hour at 350°F.
