Cambodian (Khmer) Banana with Coconut Milk

Try banana in coconut milk for a sweet, tropical dessert you can make in less than 10 minutes! It’s a simple treat anyone can enjoy.

Ingredients
- 6 small Asian bananas (See Note 1)
- 1/2 cup water
- 14 oz coconut milk
- 1/4 cup palm sugar or light brown or white sugar
- 1/8 tsp kosher salt
- ground cinnamon for dusting on top
Instructions
- Peel and cut the small Asian bananas lengthwise and then into quarters. If using the longer version, cut into 6 pieces.
- Place in a large saucepan and add the water. Bring to a boil, turn off the heat (See Note 2). Remove bananas from hot water and transfer to serving bowls. Leave banana water in saucepan.
- In same saucepan, add the coconut milk, sugar and salt. Bring to a boil, stirring constantly, until sugar is dissolved. Let cool slightly.
- Pour coconut milk over bananas, sprinkle cinnamon on top and serve.
Notes
- 2 varieties you could use would be the small Cambodian Chek Pong Moin or Thailand's Nam Wah bananas found in most Asian markets, or use 3 larger market bananas.
- If you prefer softer bananas cook on simmer after the initial boil, for another 2-3 minutes. Some prefer them almost at the mushy stage, I prefer a little bite.
