Campfire Hot Dogs with Peppers and Onions

This classic meal of campfire hot dogs with peppers and onions is cooked in a cast-iron pan and served with toasted buns! Make it with your favorite meat or plant-based hot dogs.

Ingredients

Servings
  • 1 onion cut into ½-inch wedges
  • 2 bell pepper Or 6 mini bell peppers, sweet or green, cut into long strips, seeds and membrane removed
  • 1 tablespoon neutral cooking oil generic cooking oil
  • 1 teaspoon Italian seasoning
  • ¼ teaspoon salt Omit if your Italian seasoning contains salt, sea salt
  • 4 hotdog I like Lightlife’s plant-based hot dogs (from Trader Joe’s
  • 4 hot dog bun optional
  • brown mustard spicy

Instructions

  1. Place the cast-iron pan on a hot campfire grate. Add onions, peppers, oil and Italian seasoning. Toss the veggies to incorporate the seasoning.
  2. While the veggies cook, cook the hot dogs using one of the following methods.Option 1- Add the hot dogs to the pan.  Cook until the veggies are softened and beginning to blacken, and until the hot dogs begin to char. Option 2- Add the hot dogs to roasting sticks, and cook over the fire until beginning to char. Continue cooking the veggies in the pan until softened and beginning to blacken.
  3. Toast hot dog buns on indirect heat on the campfire grate, or push the veggies and hot dogs to the edge of the pan and toast the buns in the pan.
  4. Serve on toasted buns with mustard, or skip the buns for a lower-carb meal.
