Candied Carrots

Candied carrots offer tender, slightly sweet baby carrots glazed in a buttery, sugary coating with a hint of black pepper and a sprinkle of fresh parsley. The carrots are first boiled to soften, then simmered in a butter and sugar mixture until nicely glazed, providing a balance of sweet and savory flavors. This side dish pairs well with roasted meats or holiday meals and brings a subtle depth of flavor through simple ingredients and straightforward preparation.

Description

Candied Carrots combines boiled baby carrots cooked until tender, then coated with a warm glaze made from melted butter and sugar. The sugar caramelizes lightly with the butter to create a glossy, sweet coating. Ground black pepper adds gentle spiciness that contrasts the sweetness, while salt enhances the flavors. Chopped parsley at the end adds a fresh herbal note and brightens the appearance. This dish embraces a classic slow cooking glaze technique to build flavor directly on the carrots.

The texture is soft but maintains body from careful boiling before glazing. The sweetness is moderate due to controlled sugar quantity, not overwhelming the natural carrot flavor. The butter glaze gives a creamy mouthfeel and shine. You can serve candied carrots alongside roasted meats, poultry, or as part of a vegetable medley for a balanced meal presentation.

A useful tip is to adjust the salt if using salted butter to avoid oversalting, as noted in the recipe. Cooking the carrots until just tender before glazing ensures they do not become mushy. The dish is best served soon after glazing to retain the shine and texture.

Ingredients

Servings
  • 1 lb (500g) carrot baby
  • 3 tablespoons butter unsalted
  • 3 tablespoons white sugar or brown sugar
  • 1/4 teaspoon salt or to taste
  • 3 dashes black pepper ground
  • 1 teaspoon parsley chopped

Instructions

  1. Bring a pot of water to a boil and cook the baby carrots for 5 minutes. Drain and set aside.
  2. While the carrots are cooking, heat a skillet over medium-low heat and add the butter. Once the butter melts, stir in the brown sugar until well combined. Add the carrots to the skillet and season with salt and black pepper.
  3. Cook for a few minutes until the carrots are nicely glazed, then add the parsley and mix well. Dish out and serve immediately.

Notes

  • If using salted butter, omit the added salt to keep the seasoning balanced.
