Candied Pecans

Candied Pecans are pecan halves coated in a mixture of granulated and brown sugar, cinnamon, salt, vanilla, and egg white, then baked until the sugar hardens around the nuts. The process produces crunchy, sweet, and warmly spiced pecans ideal for snacking, salads, or dessert toppings, with a balanced sweetness and cinnamon aroma.

Description

This recipe coats pecan halves with an egg white, vanilla, and water mixture before tossing them with a blend of granulated sugar, brown sugar, cinnamon, and salt. They are spread evenly on a baking sheet and baked at 300°F for 30-45 minutes, stirred every 15 minutes to ensure even caramelization. Cooling on the baking sheet allows the sugar crust to harden fully, creating a crisp coating around the nuts.

The final texture is crunchy with a sweet, warmly spiced flavor complemented by cinnamon and vanilla accents. The slow baking ensures the sugar melts and coats each pecan evenly without burning.

Once cooled, these candied pecans can be stored in an airtight container for up to one month, making them suitable for preparing in advance as a snack or garnish for various dishes.

Ingredients

Servings
  • 1/2 cup granulated sugar
  • 1/2 cup light brown sugar
  • 1 tablespoon ground cinnamon
  • 1 teaspoon salt
  • 4 cups pecan unsalted halves
  • 1 egg white
  • 1/2 teaspoon vanilla extract
  • 1 teaspoon water

Instructions

  1. Preheat oven to 300 degrees F. Line a large baking sheet with a Silpat baking mat or parchment paper and set aside.
  2. In a medium bowl, add sugars, cinnamon, and salt. Whisk until combined. Set aside.
  3. In a large bowl, whisk the egg white, vanilla, and water together until frothy. Add the pecans and gently toss until the pecans are well coated. Add the sugar and cinnamon mixture and toss until pecans are covered.
  4. Spread the pecans out in a single layer on prepared baking sheet. Bake for about 30-45 minutes, stirring every 15 minutes. The sugar mixture will harden on the pecans.
  5. Remove from the oven and let the pecans cool on the baking sheet. When completely cool, store in an airtight container for up to 1 month.

  • This recipe yields approximately 4 cups of candied pecans.
  • Ensure to stir the pecans every 15 minutes during baking to coat evenly and avoid burning.
  • Store cooled pecans in an airtight container to maintain freshness for up to one month.
