Candied Walnuts
Description
The Candied Walnuts recipe features raw walnuts coated in a sweet and spiced syrup made from granulated sugar, brown sugar, cinnamon, salt, and vanilla, all bound together using whipped egg whites. Baking at a low temperature around 300 degrees Fahrenheit for about 30 to 35 minutes with occasional stirring caramelizes the sugars, producing a crisp, hardened coating on the nuts. This process transforms the walnuts into crunchy, sweet bites with a warm cinnamon aroma.
The texture combines a firm crunch from the baked sugar coating with the characteristic nutty taste of walnuts. The balance of sweetness and a hint of salt enhances the flavor complexity. The recipe suggests adjusting cinnamon to taste and optionally including cayenne pepper for a spicy kick.
These candied walnuts are versatile; they can be served quickly as a sweet salad topping or snack. They can also be stored in an airtight container to maintain crispness for gift-giving or later use.
It's important to use raw walnuts to avoid excess salt or roasting flavors, and the level of sweetness can be increased by doubling the sugar if desired. Whipping the egg white into a frothy consistency ensures even coating and proper adhesion of the sugar mixture to the nuts.
