  • 4 pounds sweet potato peeled, halved and cut into 1 inch pieces
  • 2/3 cup dark brown sugar packed
  • 6 tablespoons butter melted, unsalted
  • 1 teaspoon cinnamon
  • 1/2 teaspoon salt
  • 1/8 teaspoon nutmeg
  • 2 cups miniature marshmallows

Instructions

  1. Preheat the oven to 400 degrees F. Coat a 9x13 inch pan or 3 quart baking dish with cooking spray.
  2. Place the sweet potatoes in an even layer in the dish.
  3. In a small bowl, whisk together the brown sugar, butter, cinnamon, salt and nutmeg.
  4. Pour the brown sugar mixture over the sweet potatoes. Toss to coat them evenly in the sauce.
  5. Bake the yams for 30-40 minutes, stirring every 15-20 minutes, until tender and caramelized.
  6. Sprinkle the marshmallows over the top, and bake for another 5 minutes or until marshmallows are melted and browned. Serve immediately.
