Candy Bacon (Pig Candy)

  • 1 pound Bacon about 12 slices *see notes, thick-cut
  • 1/2 cup light brown sugar packed
  • 1 teaspoon black pepper ground

Instructions

  1. Preheat the oven to 350 degrees Fahrenheit and place the oven rack in the middle position.
  2. Line a baking sheet with aluminum foil and place a wire rack on top. Arrange the bacon slices in a single layer on the baking rack.
  3. Mix the brown sugar and black pepper in a small bowl.
  4. Sprinkle the sugar mixture evenly over the bacon (do not flip and sprinkle on the second side). Use your fingers to spread the sugar mixture evenly over each slice.
  5. Bake for about 22-25 minutes or until the the sugar is bubbling and the bacon is crispy, rotating the sheets halfway through the cooking process.
  6. Remove from the oven and transfer to a cooling rack or to a plate or baking sheet lined with parchment paper. Cool for about 10 minutes and serve.

Notes

  • Center cut, thick bacon works best.
  • Don’t use dark brown sugar.
  • Get good quality bacon for best results.
  • Store in an airtight container for 2-3 days.
  • If you need to use 2 baking sheets to fit the bacon comfortably, place 2 ovenracks in the upper-middle and lower-middle positions
  • You can use 1/8 teaspoon cayenne pepper instead of the ground blackpepper.
