Canned Green Bean Salad
Description
This salad relies on canned green beans, drained thoroughly to avoid excess liquid. The dressing blends olive oil with yellow mustard, vinegar, and honey for balance between tangy and slightly sweet. Tossing the green beans and almonds into the dressing thoroughly coats them, lending flavor and texture.
The almonds offer a nutty crunch contrasting the tender green beans. Variations include using Dijon or honey mustard for different flavor intensities. The salad can be served cold and works well as a quick side or light lunch complement.
With minimal steps, this salad is practical for storing if using low-sodium beans; additional salt may be required. It can also be served with warmed green beans if preferred, enhancing the texture.
Ingredients
- 1 tablespoon olive oil
- 2 teaspoons yellow mustard Or use 1 tablespoon for a bolder dressing, or Dijon or honey mustard
- 1 teaspoon apple cider vinegar or white wine or rice vinegar
