  • 2 teaspoons yellow mustard Or use 1 tablespoon for a bolder dressing, or Dijon or honey mustard
  • 1 teaspoon apple cider vinegar or white wine or rice vinegar
  • 1 teaspoon honey optional
  • 14 ounce canned green beans any variety, unseasoned
  • 2 tablespoons almond Or swap sunflower seeds, slivered

Instructions

  1. Mix together the oil, mustard, vinegar and honey (if using).
  2. Drain the liquid from the green beans.  Add the green beans and almonds into a bowl with the dressing, and toss to incorporate the dressing.Divide among two bowls and serve.

Notes

  • Use low-sodium canned green beans with a pinch of salt added to the dressing if needed.
  • This salad can be served with warmed green beans instead of canned cold for a different texture.
