Description

  • 8 ounces mascarpone cheese excess water drained off if needed, full fat
  • 1 ½ cups ricotta cheese drained, whole milk
  • 1 ¼ cup powdered sugar
  • ¾ teaspoon vanilla extract
  • ¾ teaspoon almond extract
  • 4 Tablespoons mini chocolate chips
  • chocolate chip cookie for serving, broken
  • waffle cone
  • pizzelle cookie
  • graham cracker
  • cannoli shell

Instructions

  1. Combine cheeses, extracts, and powdered sugar into a large mixing bowl of a stand mixer fit with a paddle attachment (or you can use a hand mixer). Whip on medium-high until thick and fluffy, about 5 minutes. 
  2. Fold in 3 tablespoons of chocolate chips. Pour dip into serving bowl. Top with remaining chocolate chips. Let it set in fridge for about 1 hour and then serve with chocolate chips cookies. 

Notes

  • Use whole milk ricotta to achieve the proper fat content needed for a creamy and fluffy dip.
  • Whip the cheese mixture thoroughly with a mixer; hand whisking may not provide the same fluffiness.
  • The dip can separate liquid after a couple of days; stirring before serving can reintegrate the liquid but affect presentation.
  • Feel free to add favorite cannoli toppings, such as chopped pistachios, to vary the flavor and texture.
  • Serve chilled with your choice of cookie dippers like chocolate chip cookies, pizzelle, or cannoli shells.
