  • 12 jalapeños
  • 8 oz cream cheese room temperature, 226 g
  • 4 oz cheddar cheese 113 g, shredded
  • 2 oz feta cheese 56 g, crumbled
  • 2 Tbsp chives chopped
  • 1 tsp garlic powder
  • ½ cup panko breadcrumbs 60 g
  • 2 Tbsp butter melted, 28 g, unsalted

Instructions

  1. Prep: Preheat oven the 400°F (204°C). Cut each jalapeño in half, lengthwise. Use a spoon to remove seeds and ribs from each. Place each half on a parchment-lined baking sheet.
  2. Stuff: Stir together cream cheese, cheddar cheese, feta, chives, and garlic powder. Spoon the mixture evenly into all of the hollowed jalapeño, gently pressing it in to fill in the gaps.
  3. Topping: Stir together panko and melted butter. Sprinkle on top of each jalapeño half.
  4. Bake: Bake for 20 minutes, or until top is golden brown and crispy.
